Ingredients
- 6 tablespoons melted butter
- 1 cup heavy whipping cream
- 1 teaspoon peppermint extract
- 1 tablespoon matcha powder
- 1 can sweetened condensed milk
- ½ cup dark chocolate chips (for melting)
- Fresh mint leaves for garnish
Instructions
1. Start by making the crust. Combine the chocolate cookie crumbs with melted butter, then press the mixture into small tart pans or one large pie dish. Chill the crust in the fridge while you prepare the filling.
2. In a mixing bowl, whip the heavy cream until stiff peaks form. Fold in the peppermint extract, matcha powder, and sweetened condensed milk until smooth.
3. Pour the filling over the chilled crust and smooth it out evenly. Pop the pies back into the fridge for at least 4 hours—or overnight—to set.
4. Before serving, melt the dark chocolate chips and drizzle over the top of each pie. Garnish with fresh mint leaves.
