Instructions

1. Pat the chicken dry and season lightly with salt and pepper. Place it in the slow cooker.

2. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, garlic, ginger, Sriracha, turmeric, and coconut milk until smooth. Pour the sauce over the chicken.

3. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.

4. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker and stir it back into the sauce. Adjust seasoning if needed.
